Contrary to popular belief, the practice of eating a variety of fruits and vegetables on a regular basis is very new. It was neither feasible nor desirable in most of the world just a century ago. The now ubiquitous vegetable oil was not technologically possible, but animal fats were used from antiquity. The plant foods that were staples since the adoption of agriculture were primarily grains, and animal derived foods were considered the meat of a meal.
